Zoodles Cacio e Pepe Style

- 4 medium sized zucchini, washed and spiralized
- 1/4 cup finely grated Parmesan, plus more for serving
- 1/4 cup grated Pecorino (Parmesan's sassy cousin - we all have one)
- 2 cloves of garlic, peeled + smashed
- 1 tsp freshly ground black pepper (the fresh ground pepper really makes a difference)
- 1 tsp red pepper flakes (or more if you like it HOT)
- 1 tsp kosher salt
- ½ tbsp butter
- 1 tbsp Olive Oil
Instructions
- Spiralize zucchini and set aside
- In a sauté pan on low heat up the butter, Olive Oil, red pepper flakes and garlic for 2-3 mins so all the flavors mingle
- Gently add in spiralized zucchini, salt and stir occasionally to cook through, 2-3 mins
- Add Pecorino and Parmesan, stir to combine
- Stir in ground black pepper (I put the kids’ noodles to the side before the peppa’ show)
- Serve topped with more Parmesan and fresh ground pepper
