3. Because Farmers Markets, duh
We are sneaking Zucchini into everything, yes, even Burgers. They’re in season, high in antioxidants and super versatile. You don’t even know it’s there and it really lightens up the heaviness of a burger.
Zucchini + Ricotta Turkey Burgers

- 1 lb ground turkey breast
- 1/4 cup shredded zucchini
- 1/3 cup low-fat ricotta cheese
- 1/4 tsp garlic powder
- Salt + Pepper
- 1 tsp Worchester
- 2 tbsp panko breadcrumbs
- Provolone Cheese
- Arugula, for topping
- Tomato (this one has roasted tomatoes and its amazing)
- Marinated onions ( red onion, olive oil + oregano - recipe below)
- Basil Aioli (1 tbsp mayo, ½ tbsp pesto)
- Ciabatta or Italian bun
Instructions
- Mix ground turkey, zucchini, ricotta, panko, Worchester, garlic powder, S+P until combined
- Divide into 4-6 patties
- Grill and when cooked, add the Provolone Cheese until melted
- Serve with basil mayo, arugula, tomatoes and NoCrumbsLeft Marinated Red Onions
