Lasagna Roll-Ups

- 1/2 box lasagna noodles
- 1 zucchini, shredded
- 2 cups low-fat ricotta
- 1/2 cup Parmesan cheese, divided
- 2 cups marinara (homemade or Raos if you are using jarred)
- 2 cups mozzarella, shredded (If on hand, I swap 1 cup mozzarella for 1 cup provolone
- ½ ground Italian sausage
- 1 tsp Salt
- 1 tsp Pepper
Instructions
Preheat oven to 350º. Bring a large pot of salted boiling water to a boil and cook lasagna noodles until al dente. Drain and set aside.
In a large skillet over medium heat, heat oil. Add sausage and cook till no longer pink. Add shredded zucchini and sauté for 2-3 mins. Set aside.
In a large bowl, stir together ricotta, 1/4 cup Parmesan, 1 cup mozzarella and season with salt and pepper.
Add zucchini and sausage mixture to cheese. Stir.
Spread the ricotta mixture onto one side of lasagna noodle roll and add more ricotta about half way through and roll some more.
In a large deep baking dish, spoon a layer of marinara on bottom of dish. Add the roll-ups and spoon more sauce onto each roll-up. Add the remaining mozzarella and Parmesan over each roll up. Bake until bubbly and melted, about 20 minutes.
Let cool slightly and serve.
