We have so many apples from the orchard and farmers market, we are throwing them in everything these days. Give this recipe a go for a quick and refreshing side salad.
Apple Manchego Salad

- 2 Granny Smith apples, cut in matchsticks
- 10 sprigs of chive, chopped and reserve some for a topper
- 2oz Manchego cheese, cut in matchsticks. Robusto (Gouda) is really good too in here
- 1/2 - lemon, juiced. Reserve the other half incase you need more
- 1/2 tbsp OO
- 1tsp Kosher or Sea Salt
- 1tsp fresh ground pepper
Instructions
-Juice lemon
-Cut all ingredients, apples last
-Combine in a bowl and pour lemon juice over to preserve apples from browning
-Add S+P, taste and add more if needed. Sometimes the cheese is super salty.
-Taste again and add more lemon juice if needed
-Top w/ some additional Chives
-Eat and be super impressed with this restaurant quality dish you just made in 10 mins
***NOTE: when my boys eat this I don’t use as much pepper and they LOVE it!
