Butternut Squash Ravs with Sage Butter Sauce

- 1 package of butternut squash ravioli
- 2 cloves of garlic, smashed
- Half a shallot minced (optional)
- 1 tbsp Olive Oil
- 1 tbsp butter
- Grated Parmesan or Pecorino
- 6 sprigs of sage
- Salt + Pepper to taste
Instructions
Make pasta per instructions, less 1 min.
Add butter and Olive Oil to sauté pan.
Add the smashed garlic cloves and shallot to the sauté pan and sauté on low for two mins, stir occasionally. You’re infusing the butter with garlic and shallot.
Add sage, stir occasionally for 1-2 mins min. The Sage will get crispy, set the sage aside.
Add Salt and Pepper, to your liking.
With a slotted spoon, put the ravioli in the sauté pan and gently stir so the sauce covers the pasta for 1 min
-Sprinkle w/ cheese, sage and serve.
*Add toasted pistachio or pine nut if you want to take it up a notch. YUM!
